Convert the icy cold sweetness of watermelon into a refreshing frosty. Freeze watermelon chunks and place in blender with a banana, a drizzle of honey and a squeeze of lime, Whir until smooth adding a bit of water as needed to reach desired thickness. Switch out the watermelon for strawberries and leave out the banana for a delicious alcohol-free daquiri.
Or you might really enjoy a sparkling pineapple lemonade. Start by pouring one can crushed pineapple into ice cube trays and place in freezer until firmly frozen. Add the juice of 6 lemons in a gallon container. Add one large can unsweetened pineapple juice and add one 2-liter bottle of lemon lime soda. Top off with water. Taste for sweetness. Serve over the pineapple ice cubes.
For the main dish meat, dissolve salt in apple cider vinegar until no more salt will dissolve. Dip chicken legs and thighs (skin on) in the vinegar solution for just three minutes - any longer will cause them to be too salty. You can also use boneless country pork ribs. Throw on the bottom rack of the grill and let cook seven or eight minutes before turning. Leave on second side until meat is done through. How about kebabs as a side dish? This one is a winner! Wrap pineapple chunks with bacon. Alternate on skewers with red and green peppers chunks and grill until bacon is cooked and veggies are tender.
Remember a good variety of veggies - Ripe Roma tomatoes sliced thinly and tossed with basil, black olives and Sun-dried tomato vinaigrette makes a tangy and fresh salad your guests will love.
This cookout doesn't require a bun, but everybody loves a good piece of bread. Slice a baguette diagonally about 1" thick. Brush with olive oil and melted butter and rub with a cut garlic clove. Place on rack and toast just until grill marks appear. Sprinkle lightly with sea salt and serve.
Finish off with a grilled banana split - Make a slit down the length of an unpeeled banana being careful not to cut all the way through. Gently spread open and fill with mini marshmallows and chocolate chips. Wrap in foil and place on top rack of grill. Turn heat off and let residual heat melt the marshmallows and chocolate. Serve with a spoon while still warm.
